Class 3 of a multi session class: Rack #2 wine to carboys and degas. The degassing process takes 5 days of which the wine is vigorously stirred each day. This step is proposed since the grapes/must/wine will dictate the timing of each stage. The actions needed for this step will be discussed and a handout will be available. A handout for the full process will also be available. Attend all classes - or as many dates that will work for you.
